    Classic Chicken Salad

Chicken salad is one of those dishes, that when done right, is food perfection. While I love creating variations of the classic, this simple list of ingredients translates into sublime chicken salad. The creaminess of this salad, which puts whole Greek yogurt in the starring role with sour cream and mayonnaise as the supporting players is so much lighter and more delicious than a chicken salad laden with mayo. A quick lunch, a light dinner…I love opening my fridge door and seeing lots of choices for healthy meals! Don’t have leftover chicken breasts? Try my recipe for perfect poached chicken everytime. Oven-Fried Potato Chip Crust Chicken

Crispy chicken breasts are always a big hit in our family…and probably any house with children. So, I’m on a never-ending quest to come up with new variations on a breaded chicken breast, and make the recipe as easy as possible. I think I have hit the jackpot here – POTATO CHIPS are in the breading! Obviously, your kids are going to love these. And for the cook – this chicken is oven-fried, so no one gets stuck at the stove. Chicken in Garlic-Almond Sauce

The flavors of this delicious dish perfectly embody a rustic Spanish braise. If you have ever made romesco sauce you will recognize the technique here. Just like romesco, nuts and breadcrumbs are the backbone of this sauce. But, what made me fall in love with this dish…the first time I tried is many years ago in Madrid…is the garlicky, almond Sherry flavor. To me, those taste memories always evoke a leisurely, late in the evening Spanish meal. There is a good chance you are going to have a decent amount of extra sauce – great news for a future dinner (this sauce freezes great). You could also serve the leftover…

    White Chicken Chili

I LOVE white chicken chili! It has all the tasty, slightly spicy complexity of beef chili without all that heaviness and the stick to the ribs element. Like every other soup or chili this meal just gets better after a day or so in the fridge, and it freezes great. My version builds a complex yet healthy base from poblano chilis and onions sautéed along with lots of garlic, cumin and coriander. I utilize the Indian technique of “blooming” spices, which simply means adding spices to hot oil and letting the flavors intensify. I use this technique almost daily in cold weather – it is an invaluable tool in developing…

Herb Sheet Pan Chicken with Roasted Garlic Sauce

You know the feeling when you hit a dinner home run? Every part of the dish comes together AND you get rave reviews. That is how this meal worked out for me, from the very first time I started developing it. I love to roast garlic for dressings, and here not only will you find roasted garlic, but I experimented and threw a few lemons in with the garlic and wow – it turned out great. It gives you the same depth of flavor as a preserved lemon, but it was so much easier and the lemons just tagged along with the garlic. The dressing here is AMAZING – you…

    Grilled Chicken Wrapped in Bacon

I feel silly even writing this up as a recipe, but one evening last week without a clear plan for dinner, I came up with this super-fast, throw-it-all on the grill dinner. In our house, and I suspect most of yours, anything with bacon is a hit – hence the inspiration behind this dinner. I rounded dinner out with some grilled green beans and corn. I get so excited when I can make a whole dinner on aluminum foil! Grilled Chicken Wrapped in Bacon Author: Kate Wagner Serves: 8-10 This recipe is uttter simplicity, which I needed at the time. But feel free to jazz this up a bit. Mixing…

    Grilled Ginger-Sesame Chicken Salad

We had such a terrific dinner Monday night! It was one of those meals that the first time you pull it together, it’s a home run! This marinade is simply delicious, and with a few additional ingredients it becomes an unbelievably tasty vinaigrette. I really want to start showing how I balance what Jeff and I (and the older boys if they are home) want to eat for dinner with what the four younger ones will eat, and most importantly that dinner will be a HAPPY time. My kids enjoy eating all kinds of flavors, they just don’t like having their food mixed together. This dinner is an really accurate…

    Pesto Chicken

One of Jeff’s favorite condiments is pesto, and after reading Williams-Sonoma’s Grill Master recipe for a Pesto Chicken Sandwich, I was inspired to come up with a version that worked for our family. I first made this meal as a pool-side lunch a few weeks ago – OMG, it was incredible! Such a fancy yet easy meal – I felt like I was sitting at a beach club in the Caribbean. http://gatherconnectempower.com/2016/07/summer-succotash/ Pesto Chicken Sandwich Author: Kate Wagner Serves: 4 I served my delectable pesto chicken with sauce dripping off the sides, warm tomatoes and melting mozzarella. Roasted Chicken Stock

Each week when all the kids leave, I always feel guilty about the random leftovers veggies in the fridge. I’ve been making stock for years (only every so often when the mood strikes and I have been organized enough to save the chicken carcass), but I usually just buy low-sodium stock at the grocery store and get on with it. The other Sunday evening, I was once again staring at my fridge when I had one of those inspiration moments, I WILL MAKE STOCK. And…I decided to up my game by roasting the carcasses and vegetables first. Roasted Chicken Stock Author: Kate Wagner Serves: 12 cups I use chicken stock…

    Remoulade Chicken Salad

Remoulade with anything…yum! After seeing a recipe for it with chicken salad in a mayo heavy sauce, I was inspired to come up with a light and healthy version using Greek yogurt. A great way to use leftover chicken and it tastes incredible! If you don’t have any leftover chicken, now is the perfect time to make my super simple poached chicken recipe. http://gatherconnectempower.com/2016/06/poached-chicken/ Remoulade Chicken Salad Author: Kate Wagner Serves: 4 One of my favorite ways to make chicken salad!
